Burlington Vermont Corporation adopts Weston Price principles to create a stronger, happier, more vital work force. Dealer.Com, an Automotive Solutions company of more than 600 employees clearly understands the benefits of serving real food. The Dot Calm Café serves 350 meals per day with a mission of providing superior nutrition and education by offering the best tasting, highest quality, nutrient dense, chemical-free food to employees and guests. The Dot Calm Café is committed to sourcing its food from local, sustainable and organic producers. Beyond this, the café is providing lacto-fermented drinks and vegetables, preparing homemade stocks for stews and soups, cooking with saturated fats, and much more. This seminar will describe in detail how the café of a large corporation evolved into serving real food, some of the hurdles involved, the educational approach, and the culture in which this great food is embedded.
